RECIPES #13-EAT YOUR GREEN EGGS & HAM

Okay, maybe not exactly green eggs & ham, but check out these ideas for healthy, “green” breakfasts! From Diets in Review… “Whole Wheat Green Tea Pancakes – We made America’s favorite breakfast food not only taste better, but better for you! An edible green tea powder is blended with whole wheat flour, sugar and vanilla for a fluffy pancake with an antioxidant punch. Spinach and Egg Omelet – If you’ve got a few minutes to spare, it takes almost no time to scramble some eggs together. When you sautee a generous handful of spinach, too, you add a rich source of fiber and vitamins to keep you satiated all morning. Top with a little feta cheese and roll in a whole grain tortilla to mobilize this breakfast. Zucchini Bread – Whether you like this fresh green squash or not, you’ll have a hard time passing up its bread. You just need two cups of grated zucchini plus heart-healthy walnuts and some seasonally delightfully cinnamon to make a healthy breakfast food. Tomato Basil Quiche – We assume anyone who doesn’t like basil is lying, because there are few things that smell and taste as incredible as this tiny herb. You can add it to fruit salads, smoothies or even omelets for a fresh, lemony bite of flavor. A more traditional use would be atop this vegetarian quiche that’s perfect for a weekend brunch. Green Fruit Salad – You can easily toss together a quick fruit salad with kiwi, green apples, pears, and grapes to add a pop of healthy color as a complement to just about any breakfast dish. A dressing of nothing more than honey and bright green lime juice will sweeten it just right. And you could even add a little minced basil! Green Tea Power Smoothie – We take just a few seconds to blend a whole green tea powder with protein powder, spinach, a banana, and other ingredients to make an on-the-go breakfast that will light your turbo boosters for a strong day.”
