Yield: 6 servings Ingredients 1 Hawaiian papaya 1/3 cup fresh orange juice 1/4 cup fresh lime juice (about 2 limes) 2 packets Truvia™ natural sweetener 3 tablespoon agave nectar 2 tablespoons chopped fresh mint leaves Instructions 1.Use a vegetable peeler to remove the skin from the papaya. Cut the fruit in half, then spoon out and discard the seeds. Roughly chop the flesh. 2.Blend the papaya with the orange juice, lime juice, Truvia and agave nectar for several minutes, until the mixture is smooth. Add the mint and pulse several times to combine, leaving visible pieces. 3.Pour the mixture into popsicle molds, snap on the tops, and freeze for at least 6 hours. No popsicle molds? Try using small plastic containers from yogurt or pudding cups. Cut a slit through each lid just big enough to fit a popsicle stick. Pour the popsicle mixture into the containers, cover with the lids, and freeze until the mixture is slushy enough to hold the stick upright. Push the sticks through the slits in the lids and continue to freeze until the popsicles are frozen solid. 4.To serve: Pull the popsicle from the mold with the handle attached. If the popsicle is stubborn, briefly submerge the mold in warm water, then try again. Strawberry Shortcake Popsicles Cool down with a tasty frozen twist on a summertime classic. Yield: Serves 12 Ingredients 4 cups strawberries, green tops removed 1 cup fat-free vanilla yogurt 1/2 cup fat-free sweetened condensed milk 3 cups corn flakes, crushed Instructions 1.In a food processor, pulse strawberries until pureed, about 2 minutes 2.Add yogurt and milk 3.Stir to mix 4.Pour into 2-oz. popsicle molds or divide among small paper cups 5.If you use paper cups, cover with aluminum foil and poke a popsicle stick through foil into center of each cup. 6.Freeze 4 hours 7.Remove from molds 8.Coat each pop with 1/4 cup of crushed cereal 9.Wrap and freeze any pops you are not immediately eating Electric Green Popsicles Ingredients: • 3 ripe bananas • 1 medium pineapple • 2 cups spinach • Water Blend until smooth and pour into molds.
